After the fish [having been headed, gutted and split] are washed, they are forked into the home-made wooden. wheelbarrows and taken to the 'rooms' at the head of the wharf where they are stacked in heavy rock salt to pickle. At this stage they are referred to as 'green fish.' After proper curing in the salt, the green fish are spread, split side up, on long racks, called flakes to dry in the sun.
